Accordingly, to the AVPN (Associazione Verace Pizza Napoletana) we can’t say that the Ooni Koda produces authentic Neapolitan pizzas. However, we can ensure you that they’re pretty dang close. The reason why we can say that is because the Onni Koda uses gas to bake the pizzas. To be officially recognized as a Neapolitan Pizza, the oven in which the pizza is baked must be fired with wood.
Details aside, the performance of this unit is amazing! In our tests, the oven took about 20 minutes (at full power) to reach a temperature of 500°C (932°F). Using such high temperatures gives you the ability to produce delicious pizzas in about 60 to 90 seconds. Cooking with this temperature takes some practice. It is not difficult, but you’ll need to understand how the dough and the different ingredients react to such high temperatures.
Using high temperatures also means that you’ll need to pay attention to what you are cooking. The pizza has to be rotated every 20 to 30 seconds so the crust bakes evenly and doesn’t burn. When you’re new to this process, you will definitely make some mistakes (we did). But with practice, the technique is easily mastered. If you find it difficult to cook with high temperatures, once the oven is properly heated and the pizza is ready for loading, you can lower the flame to about half power. This will prevent it from burning so quickly, especially the edge nearest to the burner.
One of the great advantages of the Ooni Koda is that isn’t just useful for pizza. We also use it for roasting fish, steaks, vegetables, and some types of bread. It’s very fun to experiment and see how foods react to high temperatures. Cooking with this oven is a totally different experience when compared to traditional ovens.

The only disadvantage that we found in the Ooni Koda is that is not designed for all-weather use. Exposure to the elements, particularly moisture, can damage it over time and Ooni cautions against spiders taking up residence in the propane hose and fittings. So before you buy, consider whether you have the storage space necessary to keep your oven properly protected.
Luckily, the Ooni Koda is easy to clean and storage. Exterior surfaces can be wiped down with a wet cloth and the interior can be cleaned by simply running the oven on high for 30 minutes (to burn off any food scraps), allowing it to cool, then wiping the soot away with dry paper towels. Ooni also recommends flipping the pizza stone after each use, this way the underside will clean itself during your next cooking cycle.
