Homemade pasta is one of the best things you can do in the Kitchen. Making it from scratch is very simple, very inexpensive, and very delicious. If you’ve ever tasted fresh pasta, you probably don’t need any convincing. One of the best things in making your one pasta is that every ball you make it will be different. There are no two equal balls of pasta!

This recipe is very easy to make, but we have some tips for you! First is 00 flour, if you want to make perfect pasta you should definitely use it. Using 00 flour makes the pasta much finer, and more importantly, the gluten strands activate so much quicker when the pasta is so much finer. And the last tip we have for you is to make it on a cold surface like marble. Using a cold surface turn the making process easier.

350 g 00 flour
1 teaspoon salt
1 teaspoon extra virgin olive oil
4 whole eggs, plus 2 yolks

  1. Put the flour onto a cold surface and use a fork to form a well in center. Season the center of the well with salt and add olive oil;
  2. Gently whisk the eggs in a bowl. Add a third of whisked eggs into well. Use a fork to gradually incorporate flour into the eggs. When it is almost incorporated, add another third. Continuing to mix the flour, careful not to let eggs slide out. Create another well in the middle of the flour and egg mixture and add the remaining egg, combining until the dough looks like crumbs;
  3. Once the eggs are incorporated, flour your ands and begin forming a ball. Continue to flour your hands and knead the ball of dough for about 10 minutes until firm and elastic;
  4. Wrap in plastic and rest for at least 20 minutes before rolling;
  5. Lightly flour your pasta machine (or rolling pin) before fore you feed the dough through every time to prevent it from sticking. Make sure your hands, as well as your surface, are lightly coated in flour. After rolling the dough you can make lot of diferente pastas like spaghetti, fettuccine, tagliatelle and much more.
