Red Onion Jam with Poppy Seed

We love a good homemade jam. Although we can find delicious jams at the supermarket, nothing beats a good homemade jam.

In this week's recipe, we decided to share a delicious red onion jam inspired by the Italian American Cookbook.

Although very simple, this jam has a complex flavor that is sweet, sour, and savory all at once, with a textural twist from the seeds and a light citrusy flavor from the lemons. It's the perfect accompaniment to crackers and cheese.

630 g (2 cups)

Ingredients

54 g (¼ cup) extra-virgin olive oil
2 to 3 medium red onions, finely diced
22 g (1 tablespoon plus 1½ teaspoons) kosher salt
35 g (¼ cup) poppy seeds
2 bay leaves
125 g (½ cup) fresh lemon juice (from about 2 large lemons)
30 g (2 tablespoons) port wine
340 g (1 cup) honey
60 g (¼ cup) Chianti vinegar or red wine vinegar
4 g (2 teaspoons) chili flakes
Grated zest of 1 lemon

Instructions

  1. In a small pot, heat the olive oil over medium heat. Add the onions, salt, poppy seeds, and bay leaves, and cook, stirring continually, until the onions are fragrant and translucent, about 5 minutes.
  2. Add the lemon juice, port wine, honey, vinegar and chili flakes. Increase the heat to medium-high and bring to a boil, then reduce the heat to medium-low and simmer until the liquid is thickened and reduced enough to coat the back of a spoon, about 30 minutes. Add the lemon zest and stir well to combine.
  3. Remove the jam from the heat and transfer to a heatproof container. Place in the refrigerator to cool before serving. Leftover jam keeps, covered in an airtight container in the refrigerator, for up to 1 week.
