1 onion, large
1 leek, medium
1 zucchini, medium
2 carrots, peeled
2 potatoes, medium
250 g pumpkin
1 l (4 cups) chicken or vegetable stock

  1. Chop all the vegetables into 2 cm (½-inch) chunks.
  2. Heat the oil in a large pot over medium heat. Add the onion, leek, zucchini, carrots, potatoes, and pumpkin, and cook until softened, about 5 minutes.
  3. Add the vegetable stock and salt and bring to a boil, then reduce heat and simmer until the vegetables are tender, about 20 minutes.
  4. Remove from heat and let cool slightly.
  5. Use a hand blender or transfer the soup to a blender to puree until smooth. If the soup is too thick, add some water and bring to a boil, and remove from heat.
  6. Taste for seasoning and adjust with more salt if necessary.
  7. Serve in bowls.
