Our Ultimate Roasted Sweet Potatoes Recipe

In this week's recipe, we bring you our Ultimate Roasted Sweet Potatoes Recipe. This recipe is different from the other recipes you find online because instead of using regular size sweet potatoes we use small ones. We love to use small sweet potatoes not only because they cook faster, but because they end up with a crisper texture, which produces a better eating experience.

700 g small sweet potatoes
17 g (1 tablespoon) + 6 g (1/2 teaspoon) sea salt
60 g (4 tablespoons) olive oil
3 g (1 teaspoon) chili flakes
3 cloves garlic
2 bay leaves
Chives, finely chopped

  1. Preheat the oven to 200 ºC (392 ºF).
  2. Gently scrub the potatoes with a clean stainless steel scrubber (the idea is to lightly remove the outside skin of the potatoes).
  3. Place the potatoes in a large pot and cover with cold tap water and add 1 tablespoon of salt. Place the pan over medium heat and simmer for 6 minutes.
  4. Carefully remove the cooked potatoes and transfer them into a roasting tray. Add the olive oil, chili flakes, salt, garlic cloves, and bay leaves. Mix everything ensuring that all the potatoes are coated with olive oil.
  5. Place the roasted tray in the oven and cook for 25 minutes or until the potatoes are golden. Remove from the oven and top with chopped chives.
