Core is Clare Smyth's much-anticipated debut book and the latest addition to Phaidon's seminal chef monograph series. The book captures Clare's singular passion, experience and pursuit of excellence, charting her rise from prodigy to protégé to culinary giant.

It tells the story of her journey from a farm in Country Antrim to becoming the first and only British female chef to hold three Michelin stars and being appointed MBE for her contribution to UK gastronomy.

One of Britain's Best Chefs

Clare is one of Britain's most highly regarded chefs. Her Restaurant, Core, is celebrated worldwide and known for its natural, sustainable food sourced from the UK's most dedicated farmers and food producers.

Core puts Britain's best foot forward, showcasing the country's most outstanding produce, all sourced from a tight-knit collective of trusted suppliers who, like the team in Clare's restaurant, have spent their lives dedicated to excellence.

This book beautifully weaves essays and stories behind the restaurant's philosophy, including the informal approach to luxury, Core's team and values, and the attention to artistry and craft. Then there are the dishes' stories, all drawing on ingenuity, nostalgia, humor, and craftsmanship.

A Beautifully Designed Cookbook

Playfully named dishes such as the CFC and Core-teser are featured alongside classics such as Potato and Roe, Beef and Oyster, and Notting Hill Forest. In total, the book includes 60 recipes for key dishes created by Clare and served at Core, as well as 70 recipes for basics, including stocks, sauces, and breads. Everyone is very detailed and precise, allowing the more adventurous chef to recreate the recipes in their restaurants.

Core is one of the most beautiful books of Phaidon's seminal chef monograph series. The print and presentation quality reflects the highest standard Clare represents.
