Ingredients

250 g dark chocolate
50 g unsalted butter
6 egg whites
Pinch sea salt
80 g de white sugar
Pumpkin bushi, optional

Instructions

  1. Break the dark chocolate into small pieces and place it in a heatproof bowl with the butter. Melt gently over a bain-marie, stirring until smooth. Set aside to cool slightly.
  2. In a separate bowl, whisk the egg yolks with the sugar until the mixture becomes pale and slightly thickened.
  3. In a clean bowl, add the egg whites and a pinch of sea salt. Whisk until soft peaks form, then continue whisking until firm peaks form.
  4. Add the melted chocolate to the egg yolk mixture and mix until well combined.
  5. Add one-third of the whipped egg whites to the chocolate mixture and mix to loosen. Gently fold in the remaining egg whites, keeping as much air as possible.
  6. Spoon the mousse into a serving bowl, refrigerate for at least 4–5 hours, until set.
  7. Finish with a light sprinkle of pumpkin bushi, if using.
