Following the theme of last week's recipe, today we decided to share one of our favorite online focaccia recipes — Claire Saffitz Focaccia.
We are big fans of Claire, and after trying many of her recipes, we can say that this recipe is one of her best. The combination of the soft interior with the perfect crispy bottom makes this one of the most delicious focaccia we have ever tried.
1 (7 g / ¼ oz) envelope active dry yeast
780 g (6 cups) bread flour
17 g (2 tablespoons) Diamond Crystal kosher salt
110 g (½ cup) extra-virgin olive oil (5 oz / 110g), plus 55 g (¼ cup) for topping plain focaccia and more for oiling hands
Fresh rosemary Leaves, for sprinkling the top
Flaky salt, for sprinkling the top
