Ingredients

215 g (1¾  cups) all-purpose flour
4 g (1 teaspoon) baking powder
6 g (1 teaspoon) baking soda
3 g (1 teaspoon) ground cinnamon
1 g (½ teaspoon) allspice
0.5 g (¼ teaspoon) cardamom
0.5 g (¼ teaspoon) nutmeg
57 g (¼ cup) unsalted butter, room temperature
52 g (¼ cup) coconut oil
150 g (¾  cup) granulated sugar
2 large eggs
30 g (2 tablespoons) yogurt, plain
5 g (1 teaspoon) vanilla
3 very ripe bananas, mashed, about 430 g
1 banana
light brown sugar

Instructions

  1. Preheat the oven to 180 ºC (350 ºF) and grease a loaf pan with softened butter.
  2. Combine the flour, baking powder, baking soda, and all the spices in a bowl, then whisk together and set aside.
  3. Cream the butter and the coconut oil, then add the sugar and mix at high speed until well combined and lighter in color, about 3 minutes.
  4. Mix the eggs one at a time, then beat in the vanilla extract. Mix the mashed bananas in, add the dry ingredients, and fold together until combined.
  5. Slice the other banana lengthwise and coat the top of both halves with light brown sugar.
  6. Transfer batter to your prepared loaf pan, top with the sugar-coated banana, and bake at 350F for about 50-60 minutes or until a skewer comes out of the center clean.
