Australia is well known for its themed festivals. The town of Murwillumbah, on the far north coast of New South Wales, heads its first banana festival in 1955. Every year, until 2019, for one night in August, the Main Street is closed and filled with all things banana. This Banana Fritters Recipe is just one of the delicious things that are served in this festival.

Ingredients

4 bananas, peeled and cut in half lengthwise
30 g (2 tablespoons) caster (superfine) sugar
Vegetable oil, for deep-frying
150 g (1 1/4 cups) all-purpose flour
Icing sugar, to serve
Vanilla ice cream, to serve

For the Batter

150 g ( 1 1/4 cups) all-purpose flour
30 g (2 tablespoons) caster (superfine) sugar
1 egg, separated
15 g (1 tablespoon) vegetable oil

Instructions

  1. To make the fritter batter, combine the flour and 15 g (1 tablespoon) of the caster sugar in a large bowl. Made a well in the centre. Add the egg yolk, oil and 250 g (1 cup) water.
  2. Use a balloon whisk to whisk until you have a smooth batter. Cover with plastic wrap and set aside for at least 1 hour.
  3. Just before making the fritters, whisk the egg white in a clean, dry bowl until it is stiff, then fold into the batter.
  4. Put the bananas on a plate and sprinkle over the remaining caster sugar.
  5. Half-fill a large deep saucepan with enough oil for deep-frying and heat over medium heat. The oil is ready when a cube of bread dropped in sizzles on contact and turns golden in 10 - 15 seconds. Alternatively, use a thermometer and heat to 220 ºC (425 ºF).
  6. Line a plate with paper towels and set aside. Put the flour on a plate. Toss the bananas in the flour, then dip them in the batter, allowing any excess batter to drip back into the bowl.
  7. Use tongs to hold the bananas by the tip and carefully lower them into the hot oil. Deep-fry for 2 minutes. Turn over and cook for another 2 minutes, or until golden. Use tongs to transfer to the lined plate.
  8. Sprinkle with icing sugar and serve hot with ice cream.
