Roasted Chicken Thighs with Chorizo and Potatoes

We decided to share a delicious recipe that we love to do when we are short on time in this week's recipe.

This Roasted Chicken Thighs Recipe is inspired by the latest book from Dona Hay - One Pan Perfect. Our idea with this recipe is to show you the different layers of flavor you can create when you know how to join a few star ingredients.

Ingredients

1 kg (2.2 lb) roasting potatoes, peeled and sliced into thin wedges
2 red onions, peeled and sliced into wedges
1 red bell pepper, slice into strips
60 g (1/4 cup) extra virgin olive oil
30 g (2 tablespoons) balsamic vinegar
Sea salt
Freslhy cracked black pepper
4 × 125 g (4.5 oz) chicken thigh fillets, trimmed and halved
3 chorizo sausages, cut into thirds
7 g (1 tablespoon) sweet smoked paprika
8 sprigs oregano

Instructions

  1. Preheat oven to 220°C (425°F).
  2. Place the potatoes, onions, red bell pepper, and 2 tablespoons olive oil, balsamic vinegar, salt, and pepper in a bowl and toss to coat. Place on a large baking tray lined with non-stick baking paper and bake for 20-25 minutes or until lightly golden
  3. While the potatoes are cooking, combine the chicken, chorizo, paprika, oregano, sea salt, and remaining oil and toss to coat. Place the chicken and chorizo on top of the potatoes, and cook for a further 20-25 minutes or until the chicken is golden and cooked through.
