Our Family Meal Chili con Carne Recipe

In this week's recipe, we'll share our family meal Chili con Carne Recipe. This is one of our favorite recipes to cook because it's super easy to do and great for company.

We love this recipe so much that we have two versions of it! One served steamed white rice, and the other topped with Fritos and shredded cheese.

Ingredients

1 tablespoon vegetable oil
1 large white onion, finely chopped
1 large green bell pepper
900 g (2 pounds) ground beef, 80% lean
Kosher salt
Freshly ground black pepper
2 x 280 g (10 oz) cans diced tomatoes
2 merit chilis, or two of your favorite chilis
2 x 730 g (26 oz) cans Southwestern-style beans

Instructions

  1. In a large Dutch oven, heat the oil over medium heat until hot. Add the onions and bell peppers and sauté until tender, about 8 minutes.
  2. Add the beef and a couple of pinches each of salt and pepper and cook, stirring often to break up the meat, until it loses its pink color, 6 to 7 minutes.
  3. Stir in the tomatoes and beans with their juice. Add the dry chilies and bring to a simmer, reduce the heat, and simmer, stirring occasionally, for 30 minutes. Taste and adjust the seasoning.
  4. Ladle the chili into bowls. Serve with steamed white rice or topped with Fritos and grated Cheddar and accompanied by cornbread.
