Ingredients

300 g (1 1/2 cups) white rice
4 eggs
240 g (8.5 oz) kimchi
8 g (4 teaspoons) furikake seasoning
20 g (4 teaspoons) chili oil
Coriender leaves
Sea Salt

Instructions

  1. Rinse rice in several changes of cold water until water is clear, then drain well.
  2. Bring rice, sea salt, and water (3 3/4 cups) to a boil in a large pan, uncovered, without stirring, until steam holes appear in rice and grains on surface look dry, 5 to 7 minutes. Reduce heat to very low, then cover the pot with a tight-fitting lid and simmer 15 minutes.
  3. Remove from heat and let stand, covered for 5 minutes.
  4. While the rice is resting fry the eggs.
  5. Gently fluff rice with a fork. Divide the rice, eggs, and kimchi between plates, topping everything with furikake seasoning, chili oil, and coriander leaves.
